KIT INCLUDES: min 500g sweet potato (oiled and seasoned with cajun), corn cob, capsicum, red onion, avocado, C&Co buttermilk dressing

INSTRUCTIONS: Bake sweet potato at 180C for 30min or until tender. Grill corn until lightly charred and tender. Slice corn off cob when cool to touch. Slice red onion, capsicum and avocado, and combine gently with sweet potato, corn and fresh herbs. Drizzle with buttermilk dressing.
